Description
These Raspberry Cream Cheese Bites are little pockets of joy — flaky pastry filled with a sweet cream cheese mixture and a pop of raspberry goodness. Quick to make, irresistibly cute, and perfect for brunches, parties, or sweet snack cravings!
Ingredients
-
1 tube refrigerated crescent roll dough (or 1 sheet puff pastry, thawed)
-
4 oz cream cheese, softened
-
3 tbsp powdered sugar
-
1 tsp vanilla extract
-
¼ cup raspberry preserves (or 12 fresh raspberries)
-
Optional: zest of ½ lemon
-
Optional: powdered sugar for dusting
Instructions
-
Preheat oven to 375°F (190°C) and lightly grease a mini muffin pan.
-
In a bowl, beat together cream cheese, powdered sugar, and vanilla until smooth and fluffy.
-
Roll out crescent dough and pinch seams together. Cut into 12 equal squares.
-
Press each square into a mini muffin cup to form a little pastry shell.
-
Spoon about 1 tsp of cream cheese filling into each, then top with ½ tsp raspberry preserves or a fresh raspberry.
-
Bake for 12–15 minutes, until the pastry is golden and puffed.
-
Cool for 10 minutes before removing from pan. Dust with powdered sugar, if desired.
Notes
-
Keep the dough chilled before shaping — it’s easier to work with.
-
You can prep the filling in advance and refrigerate it overnight.
-
These freeze beautifully once baked — perfect for make-ahead treats!
-
Want to switch it up? Use any berry jam or add chopped nuts on top before baking.
