2 tablespoons olive oil or butter

1 medium onion, diced

3 garlic cloves, minced

8 oz cremini or white mushrooms, sliced

1 tablespoon Dijon mustard

1 tablespoon all-purpose flour

1 cup chicken broth

½ cup sour cream (or Greek yogurt)

1 teaspoon smoked paprika (optional)

Fresh parsley, for garnish

Cooked egg noodles, rice, or mashed potatoes (for serving)
Instructions

Season chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden and cooked through, about 5-7 minutes. Remove and set aside.

In the same skillet, add more oil if needed. Sauté onions for 3-4 minutes until soft. Add garlic and mushrooms, and cook until mushrooms are browned.

Stir in Dijon mustard, then sprinkle flour over the mixture. Cook for 1-2 minutes while stirring.

Slowly whisk in chicken broth, stirring constantly to prevent lumps. Simmer until sauce thickens, about 5 minutes.
