  • 1 ½ lbs boneless, skinless chicken breast or thighs, cut into bite-sized pieces

  • Salt and pepper, to taste

  • 2 tablespoons olive oil or butter

  • 1 medium onion, diced

  • 3 garlic cloves, minced

  • 8 oz cremini or white mushrooms, sliced

  • 1 tablespoon Dijon mustard

  • 1 tablespoon all-purpose flour

  • 1 cup chicken broth

  • ½ cup sour cream (or Greek yogurt)

  • 1 teaspoon smoked paprika (optional)

  • Fresh parsley, for garnish

  • Cooked egg noodles, rice, or mashed potatoes (for serving)


Instructions

 

  1. Season chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden and cooked through, about 5-7 minutes. Remove and set aside.

  2. In the same skillet, add more oil if needed. Sauté onions for 3-4 minutes until soft. Add garlic and mushrooms, and cook until mushrooms are browned.

  3. Stir in Dijon mustard, then sprinkle flour over the mixture. Cook for 1-2 minutes while stirring.

  4. Slowly whisk in chicken broth, stirring constantly to prevent lumps. Simmer until sauce thickens, about 5 minutes.

  5. Lower the heat, stir in sour cream and smoked paprika (if using). Return chicken to the pan and let simmer 2-3 minutes until heated through.

  6. Serve hot over egg noodles, rice, or mashed potatoes. Garnish with fresh parsley and enjoy!
