Ingredients

For the Dough:

  • 1 cup water

  • ½ cup unsalted butter

  • 1 tbsp granulated sugar

  • ¼ tsp salt

  • 1 cup all-purpose flour

  • 3 large eggs

For the Coating:

  • ½ cup granulated sugar

  • 1 tsp ground cinnamon

  • ¼ cup unsalted butter, melted


Instructions

 

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

  2. In a medium saucepan over medium heat, combine water, butter, sugar, and salt. Bring to a gentle boil.

  3. Add the flour all at once and stir vigorously until the dough pulls away from the sides of the pan and forms a ball (1–2 minutes).

  4. Transfer the dough to a bowl and let it cool for about 5 minutes.

  5. Add the eggs one at a time, beating well after each addition. The dough will look separated at first—keep going until it’s smooth and glossy!

  6. Scoop 1-inch balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

  7. Bake for 20–24 minutes, until puffed and golden brown.

  8. While still warm, brush each bite with melted butter, then roll generously in the cinnamon sugar mixture.

  9. Serve warm and enjoy with your favorite dipping sauces!

Notes

  • Let the dough cool slightly before adding the eggs to avoid scrambling.

  • Use a small cookie scoop for evenly-sized bites (and quicker prep!).

  • For a gluten-free version, use a 1:1 GF flour blend.

  • These reheat beautifully—just pop them in the oven at 300°F for 5 minutes.
