Ingredients

  • 2 large boneless, skinless chicken breasts (or 4 small)

  • Salt and pepper, to taste

  • 1 tsp garlic powder

  • 1 tbsp olive oil

  • 2 tbsp butter

  • 8 oz cremini or white mushrooms, sliced

  • 1 small onion, finely chopped

  • 3 garlic cloves, minced

  • 1 tsp fresh thyme (or ½ tsp dried thyme)

  • ½ cup chicken broth

  • ¾ cup heavy cream

  • ½ cup grated Parmesan cheese

  • Fresh parsley, for garnish (optional)


Instructions

  • Slice chicken breasts in half horizontally to make thinner cutlets. Season both sides with salt, pepper, and garlic powder.

  • Heat olive oil in a large skillet over medium-high heat. Add chicken and sear 4–5 minutes per side until golden and cooked through. Remove and set aside.

  • In the same skillet, melt butter. Add sliced mushrooms and cook 6–8 minutes until browned and tender.

  • Stir in chopped onion and cook for 2–3 minutes. Add garlic and thyme; sauté 30 seconds until fragrant.

  • Pour in chicken broth to deglaze the pan, scraping up brown bits. Simmer 2 minutes.

  • Add heavy cream and Parmesan cheese. Simmer 3–5 minutes until slightly thickened.

  • Return chicken to skillet and spoon sauce over the top. Simmer 2–3 minutes more.

 

  • Garnish with fresh parsley and serve hot.

Notes

  • Use chicken thighs for extra tenderness if you prefer dark meat.

  • For a dairy-free version, sub with coconut cream and skip the cheese.

  • Want more sauce? Simply double the cream and broth amounts!

  • Best served over mashed potatoes, rice, or buttered noodles.
