  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 8 ounces fettuccine or pasta of your choice

Instructions

  1. Fill a large pot with water and bring it to a rolling boil over high heat. Add a generous pinch of salt.
  2. Add the fettuccine (or your chosen pasta) and cook according to package instructions until al dente (about 8-10 minutes). Stir occasionally.
  3. Reserve about 1 cup of pasta water, then drain the rest. Set the pasta aside in a large bowl, drizzling a little olive oil over it to prevent sticking.
  4. Pat the shrimp dry with paper towels and season with salt, pepper, and paprika.
  5. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  6. Add the shrimp in a single layer and cook for 2-3 minutes on one side until pink and opaque. Flip and cook for another 1-2 minutes. Remove from skillet and set aside.
  7. In the same skillet, reduce heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant.
  8. Pour in the chicken broth, scraping the bottom of the skillet to deglaze.
  9. Add heavy cream and stir well. Allow to come to a gentle simmer.
  10. Add Italian seasoning, salt, and pepper. Let simmer for about 5 minutes until slightly thickened.
  11. Gradually stir in grated Parmesan cheese, allowing it to melt. If too thick, add reserved pasta water to reach desired consistency.
  12. Add the cooked shrimp back to the skillet and stir to coat in the sauce. Heat through for about 2 minutes.
  13. Add the cooked pasta to the skillet, tossing until well coated. Add more reserved pasta water if needed.
  14. Taste and adjust seasoning as necessary.
  15. Use tongs to twirl the pasta onto plates or into bowls.
  16. Sprinkle with chopped parsley and additional Parmesan if desired.
  17. Serve immediately while hot and creamy.

  • For added heat, consider sprinkling red pepper flakes into the sauce.
