Ingredients
-
2 boneless ribeye steaks (or sirloin, NY strip)
-
Salt and freshly ground black pepper, to taste
-
1 tbsp olive oil
-
2 tbsp butter
-
5 garlic cloves, minced
-
1 cup heavy cream
-
1 tsp Dijon mustard
-
½ cup beef broth
-
½ tsp dried thyme or fresh thyme leaves
-
Optional: chopped parsley for garnish
Instructions
-
Let the steaks sit at room temperature for 20–30 minutes.
-
Season steaks generously with salt and pepper.
-
Heat olive oil in a large skillet over medium-high heat. Sear steaks for 3–4 minutes per side. Remove and tent with foil.
-
Lower heat to medium. Add butter and garlic to the pan, sauté until fragrant (about 30 seconds).
-
Stir in broth, scraping up browned bits. Add cream, mustard, and thyme. Simmer 4–5 minutes until slightly thickened.
-
Return steaks to the pan to warm through, spooning sauce over the top.
-
Garnish with parsley and serve hot!
Notes
-
Use a meat thermometer for perfect doneness (130–135°F for medium-rare).
-
Swap ribeye for sirloin or NY strip if preferred.
-
Add sautéed mushrooms or spinach for a veggie boost.
-
This sauce also pairs beautifully with chicken or pork!
-
Fresh garlic makes a huge difference here — trust me!
