6 bone-in, skin-on chicken thighs

1 tablespoon olive oil

2 tablespoons butter

8 oz cremini or button mushrooms, sliced

4 cloves garlic, minced

1/2 cup chicken broth

1 cup heavy cream

1 teaspoon Dijon mustard (optional but highly recommended)

1/2 teaspoon dried thyme

Fresh parsley, chopped (for garnish)
Instructions

Pat chicken thighs dry and season generously with salt and pepper.

Heat olive oil in a large skillet over medium-high heat. Sear chicken, skin-side down, until golden and crispy, about 5-7 minutes. Flip and cook another 5 minutes. Remove and set aside.

Lower heat to medium. Add butter to the same skillet. Once melted, add mushrooms and sauté until browned, about 6-8 minutes. Add garlic and cook until fragrant, about 1 minute.

Pour in chicken broth, scraping up any browned bits.

Stir in heavy cream, Dijon mustard, and thyme. Simmer gently until slightly thickened, about 3-5 minutes.

Return chicken to the skillet, skin-side up. Spoon some sauce over the top.

Simmer uncovered for 10-15 minutes, until chicken is fully cooked (internal temperature should reach 165°F).
