Ingredients

  • 6 bone-in, skin-on chicken thighs

  • Salt and pepper, to taste

  • 1 tablespoon olive oil

  • 2 tablespoons butter

  • 8 oz cremini or button mushrooms, sliced

  • 4 cloves garlic, minced

  • 1/2 cup chicken broth

  • 1 cup heavy cream

  • 1 teaspoon Dijon mustard (optional but highly recommended)

  • 1/2 teaspoon dried thyme

  • Fresh parsley, chopped (for garnish)


Instructions

  • Pat chicken thighs dry and season generously with salt and pepper.

  • Heat olive oil in a large skillet over medium-high heat. Sear chicken, skin-side down, until golden and crispy, about 5-7 minutes. Flip and cook another 5 minutes. Remove and set aside.

  • Lower heat to medium. Add butter to the same skillet. Once melted, add mushrooms and sauté until browned, about 6-8 minutes. Add garlic and cook until fragrant, about 1 minute.

  • Pour in chicken broth, scraping up any browned bits.

  • Stir in heavy cream, Dijon mustard, and thyme. Simmer gently until slightly thickened, about 3-5 minutes.

  • Return chicken to the skillet, skin-side up. Spoon some sauce over the top.

  • Simmer uncovered for 10-15 minutes, until chicken is fully cooked (internal temperature should reach 165°F).

 

  • Garnish with fresh parsley and serve hot!

Notes

  • Boneless thighs can be used, but reduce cooking time slightly.

  • Half-and-half or coconut cream can substitute heavy cream if needed.

  • Let the mushrooms brown deeply for the most flavor!

 

  • Leftovers are amazing — store in the fridge for up to 4 days and reheat gently.
