Ingredients

6 bone-in, skin-on chicken thighs

Salt and freshly ground black pepper, to taste

1 tbsp olive oil

1 tbsp butter

8 oz cremini or baby bella mushrooms, sliced

5 garlic cloves, minced

½ cup chicken broth

1 cup heavy cream

¼ cup grated Parmesan cheese (optional)

1 tsp dried thyme or 1 tbsp fresh thyme

Fresh parsley, chopped (for garnish)
Instructions

Pat chicken thighs dry and season both sides with salt and pepper.

Heat olive oil in a large skillet over medium-high heat. Sear chicken, skin-side down, for 5–7 minutes until golden brown. Flip and cook another 3–4 minutes. Remove from skillet and set aside.

In the same skillet, reduce heat to medium. Add butter and mushrooms. Sauté 6–8 minutes until tender and browned.

Add garlic and cook for 1 minute until fragrant. Pour in chicken broth and scrape up brown bits from the pan.

Stir in heavy cream and thyme. Let it simmer for 2–3 minutes to thicken slightly. Add Parmesan (if using), and season to taste.

Return chicken to the pan, skin-side up. Spoon some sauce over the top. Cover and simmer for 10–12 minutes, or until chicken reaches 165°F internally.

Garnish with fresh parsley and serve hot with your favorite side.
