- 4 slices of rustic bread (like ciabatta or sourdough)
- 4 oz goat cheese, softened
- 1 cup fresh blueberries
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons honey
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- Salt and pepper to taste
- Butter for grilling
Instructions
- In a medium bowl, combine the fresh blueberries, honey, and balsamic vinegar. Gently mash the blueberries with a fork, just enough to release some of their juices while still keeping some whole.
- In another bowl, mix the softened goat cheese with the chopped fresh basil leaves using a fork until well combined.
- Taste the blueberry mixture and add a pinch of salt and pepper if desired.
- Lay out the four slices of rustic bread. Lightly brush one side of each slice with olive oil for a crispy exterior.
- On the unbrushed side of two slices, spread the goat cheese mixture evenly.
- Spoon the blueberry mixture over the goat cheese on the two slices, being careful not to overload them.
- Place the remaining two slices of bread on top, brushed side facing out, and press down gently.
- Preheat the panini press or skillet according to the manufacturer’s instructions or over medium heat, adding a little olive oil to the skillet to prevent sticking.
- Grill the panini in the press or skillet for about 3-4 minutes on each side, until the bread is golden brown and crispy, and the cheese is warm and slightly melted.
- If using a skillet, flip the panini halfway through cooking for even browning.
- Carefully remove the panini from the heat and let them sit for a minute to cool slightly.
- Slice each panini in half diagonally and serve warm.
- Optionally, drizzle extra honey or balsamic vinegar over the top and garnish with fresh basil leaves.
- Enjoy as a delightful lunch or appetizer, paired with a light salad or chips.
