  • 4 slices of rustic bread (like ciabatta or sourdough)
  • 4 oz goat cheese, softened
  • 1 cup fresh blueberries
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Butter for grilling

Instructions

  1. In a medium bowl, combine the fresh blueberries, honey, and balsamic vinegar. Gently mash the blueberries with a fork, just enough to release some of their juices while still keeping some whole.
  2. In another bowl, mix the softened goat cheese with the chopped fresh basil leaves using a fork until well combined.
  3. Taste the blueberry mixture and add a pinch of salt and pepper if desired.
  4. Lay out the four slices of rustic bread. Lightly brush one side of each slice with olive oil for a crispy exterior.
  5. On the unbrushed side of two slices, spread the goat cheese mixture evenly.
  6. Spoon the blueberry mixture over the goat cheese on the two slices, being careful not to overload them.
  7. Place the remaining two slices of bread on top, brushed side facing out, and press down gently.
  8. Preheat the panini press or skillet according to the manufacturer’s instructions or over medium heat, adding a little olive oil to the skillet to prevent sticking.
  9. Grill the panini in the press or skillet for about 3-4 minutes on each side, until the bread is golden brown and crispy, and the cheese is warm and slightly melted.
  10. If using a skillet, flip the panini halfway through cooking for even browning.
  11. Carefully remove the panini from the heat and let them sit for a minute to cool slightly.
  12. Slice each panini in half diagonally and serve warm.
  13. Optionally, drizzle extra honey or balsamic vinegar over the top and garnish with fresh basil leaves.
