- 4 slices of your favorite bread (sourdough, whole grain, or gluten-free)
- 1 cup fresh blackberries
- 1 cup plain Greek yogurt (or vanilla yogurt for extra sweetness)
- 2 tablespoons honey or maple syrup (adjust to taste)
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 tablespoon fresh mint leaves, chopped (optional, for garnish)
- Pinch of salt
- 1 tablespoon butter or coconut oil (for toasting)
Instructions
- In a medium-sized mixing bowl, add the Greek yogurt. If you prefer a sweeter flavor, you can use vanilla yogurt instead.
- Pour in the honey or maple syrup. Adjust based on your sweetness preference.
- Add the vanilla extract and lemon juice to the bowl.
- Sprinkle in a pinch of salt and whisk everything together until smooth and creamy. Set aside.
- Rinse the fresh blackberries under cold water and gently shake them to remove excess water.
- In a small bowl, mash about half of the blackberries with a fork to create a sauce. Leave some whole for garnish.
- If desired, sweeten the mashed blackberries with a teaspoon of honey or maple syrup. Mix well and set aside.
- Heat a skillet or griddle over medium heat. Alternatively, use a toaster or oven.
- Add the butter or coconut oil to the skillet and let it melt.
- Place the slices of bread in the skillet and toast each side for about 2-3 minutes until golden brown and crispy. If using a toaster, toast until golden.
- Remove the bread from the skillet and let it cool slightly on a wire rack.
- Spread a generous amount of the yogurt mixture on each slice of toasted bread.
- Spoon some of the mashed blackberry mixture over the yogurt.
- Add a few whole blackberries on top for garnish.
- Optionally, sprinkle chopped fresh mint leaves for added flavor.
- Repeat the assembly for the remaining slices of toast.
- Drizzle extra honey or maple syrup over the top if desired.
- Serve immediately while the toast is warm and crispy, paired with coffee or tea.
