  • 1 cup fresh blackberries

  • 2 tablespoons honey or maple syrup (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh mint leaves, chopped (optional, for garnish)
  • Pinch of salt
  • 1 tablespoon butter or coconut oil (for toasting)

Instructions

  1. In a medium-sized mixing bowl, add the Greek yogurt. If you prefer a sweeter flavor, you can use vanilla yogurt instead.
  2. Pour in the honey or maple syrup. Adjust based on your sweetness preference.
  3. Add the vanilla extract and lemon juice to the bowl.
  4. Sprinkle in a pinch of salt and whisk everything together until smooth and creamy. Set aside.
  5. Rinse the fresh blackberries under cold water and gently shake them to remove excess water.
  6. In a small bowl, mash about half of the blackberries with a fork to create a sauce. Leave some whole for garnish.
  7. If desired, sweeten the mashed blackberries with a teaspoon of honey or maple syrup. Mix well and set aside.
  8. Heat a skillet or griddle over medium heat. Alternatively, use a toaster or oven.
  9. Add the butter or coconut oil to the skillet and let it melt.
  10. Place the slices of bread in the skillet and toast each side for about 2-3 minutes until golden brown and crispy. If using a toaster, toast until golden.
  11. Remove the bread from the skillet and let it cool slightly on a wire rack.
  12. Spread a generous amount of the yogurt mixture on each slice of toasted bread.
  13. Spoon some of the mashed blackberry mixture over the yogurt.
  14. Add a few whole blackberries on top for garnish.
  15. Optionally, sprinkle chopped fresh mint leaves for added flavor.
  16. Repeat the assembly for the remaining slices of toast.
  17. Drizzle extra honey or maple syrup over the top if desired.
