  • 1/4 cup honey
  • 1/2 cup mixed nuts (such as walnuts, pecans, and almonds), roughly chopped
  • 1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried rosemary)
  • 1 tablespoon olive oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 baguette or crackers, for serving

Instructions

  1. In a medium mixing bowl, combine the chopped mixed nuts, fresh rosemary, olive oil, sea salt, and black pepper. Stir until the nuts are well coated with the oil and seasonings.
  2. Drizzle in the honey and mix again until the nuts are evenly coated. Set this mixture aside while we prepare the Brie.
  3. Preheat your oven to 350°F (175°C).
  4. Place the round of Brie cheese on a baking sheet lined with parchment paper.
  5. Optionally, slice off the top rind of the Brie for a more intense flavor.
  6. Spoon the honey nut mixture over the top of the Brie, covering it generously.
  7. Bake in the preheated oven for about 15-20 minutes, or until the cheese is soft and gooey. Keep an eye on it to ensure it doesn’t overcook.
  8. Let the Brie cool for about 5 minutes after removing it from the oven.
  9. Slice your baguette into thin rounds or prepare your favorite crackers.
