  • 1 round of Brie cheese (about 8 ounces)
  • 1 cup fresh or dried figs, chopped
  • 1/4 cup honey
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • 1 tablespoon balsamic vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 sheet of puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • Crackers or sliced baguette, for serving

Instructions

  1. If using fresh figs, wash and chop them into small pieces. If using dried figs, chop them into small bits.
  2. In a medium bowl, combine chopped figs, honey, chopped rosemary, balsamic vinegar, salt, and black pepper. Mix until figs are well coated.
  3. Preheat your oven to 375°F (190°C).
  4. Place the Brie on a cutting board and carefully slice off the top rind (optional).
  5. Place the Brie on a baking sheet lined with parchment paper.
  6. Spoon the fig mixture generously over the top of the Brie.
  7. Roll out the thawed puff pastry on a lightly floured surface, large enough to wrap around the Brie.
  8. Place the Brie with the fig mixture in the center of the puff pastry. Fold the pastry over the Brie, pinching the edges to seal tightly.
  9. Flip the wrapped Brie over so the seam side is down. Brush the top with the beaten egg and sprinkle with extra rosemary if desired.
  10. Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the pastry is golden brown and puffed.
  11. While the Brie is baking, arrange crackers or baguette slices on a serving platter.
  12. Once baked, let the Brie cool for about 5 minutes before serving.
  13. Cut into the puff pastry and serve the warm Brie with the fig topping alongside the crackers or baguette slices. Enjoy!
