- 1 round of Brie cheese (about 8 ounces)
- 1 cup fresh or dried figs, chopped
- 1/4 cup honey
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
- 1 tablespoon balsamic vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 sheet of puff pastry, thawed
- 1 egg, beaten (for egg wash)
- Crackers or sliced baguette, for serving
Instructions
- If using fresh figs, wash and chop them into small pieces. If using dried figs, chop them into small bits.
- In a medium bowl, combine chopped figs, honey, chopped rosemary, balsamic vinegar, salt, and black pepper. Mix until figs are well coated.
- Preheat your oven to 375°F (190°C).
- Place the Brie on a cutting board and carefully slice off the top rind (optional).
- Place the Brie on a baking sheet lined with parchment paper.
- Spoon the fig mixture generously over the top of the Brie.
- Roll out the thawed puff pastry on a lightly floured surface, large enough to wrap around the Brie.
- Place the Brie with the fig mixture in the center of the puff pastry. Fold the pastry over the Brie, pinching the edges to seal tightly.
- Flip the wrapped Brie over so the seam side is down. Brush the top with the beaten egg and sprinkle with extra rosemary if desired.
- Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the pastry is golden brown and puffed.
- While the Brie is baking, arrange crackers or baguette slices on a serving platter.
- Once baked, let the Brie cool for about 5 minutes before serving.
- Cut into the puff pastry and serve the warm Brie with the fig topping alongside the crackers or baguette slices. Enjoy!
